Apple muffins


We baked apple muffins with kids. This recipe is from Kinuskikissa, as are so many other recipes I use and which is a constant source of inspiration for my baking.
This time I used the recipe just as it was, and to share it here I used Google Translate to translate it. You must be careful with that, it is not very good in Finnish, and for example it transferred some of the desilitres to cups, which makes the amount to 2,5-times as big as it should be... So if you use it, don't forget to proofread it! 


about 20 muffins

For the dough:
200 g margarine
2 ½ dl sugar
2 eggs
6 dl wheat flour
2 teaspoons baking powder
1 teaspoon of cinnamon
pinch of salt
2 ½ dl of milk

Filling:
2 apples
2 tablespoons brown sugar (fariinisokeri / farinsocker)
2 tsp cinnamon


Beat the margarine and sugar until stiff. Add the eggs one at a time. Combine the dry ingredients together. Add the dry ingredients into the mixture alternating with the milk.
Fill the muffin forms with batter. 
Peel the apples and remove the cores. Cut into thin wedges and cut the wedges to 2-3 parts. Mix the apples with the brown sugar and cinnamon. Press the apple pieces deep in the dough.
Bake at 200 degrees for about 20 minutes.
